Pimento Cheese Dip

Say Cheese! You will be smiling after a taste of this dip I promise. I can't believe I haven't posted anything with cheese recently. It is probably my favorite food and I could easily polish off an entire block in one sitting if it was good for me. I combined my two favorite cheeses in this dip - sharp cheddar and pepper jack. The smoky paprika is the real flavor winner here and I would highly recommend using it over regular paprika (I found at Trader Joe's). At your next party you can use as a spread on crackers, chips for dipping (I LOVE the new Tostitos roasted red pepper chips), or even lather it on your sandwiches. SPREAD the love!



12 oz jar roasted red peppers (drained, remove seeds - if any)

8 oz cream cheese

1/4 cup light mayonnaise

2 green onions (chopped)

1 teaspoon smoked paprika (love the flavor of this!)

1-1/2 cups sharp cheddar cheese (freshly grated from block)

1-1/2 cups pepper jack cheese (freshly grated)

Ritz crackers

Chips (try Tostitos roasted red pepper!)


1. Using a food processor, finely chop the red peppers. Transfer to a strainer and drain off any liquid and set aside.

2. Add the cream cheese, mayo, onions and paprika to the food processor. Mix until combined. Add the sharp cheddar and pepper jack cheeses. Continue mixing until the cheese starts to break up into smaller pieces and form a ball.

3. Remove mixture from food processor and stir in roasted red peppers.

4. Store in refrigerator until ready to enjoy. Serve with Ritz crackers or tortilla chips. You can also use it as a spread on sandwiches!
