Creamy Cucumber Salad

I love using mini cucumbers for an extra crunch!



8 mini cucumbers (washed and sliced)

1/2 TB salt (will rinse off later)

1/2 cup light mayonnaise

1/4 cup yogurt ranch dressing

1 TB white vinegar

1 TB honey

1 teaspoon dill weed

1/2 teaspoon garlic powder

few dashes of pepper


1. Add cucumbers to a bowl and toss in salt. Let sit in the refrigerator for one hour. The salt will remove the moisture from the cucumbers.

2. Prepare the dressing by whisking together the remainder of the ingredients until combined. Refrigerate until cucumbers are ready.

3. Pour the cucumbers into a strainer to drain the excess water. Rinse the cucumbers to remove salt, and pat dry. Add chopped cucumbers to dressing mixture. Chill for a few hours in the refrigerator before eating.
