Frosted Banana Bars

Updated: Apr 18, 2019

The only thing better than banana bread is banana bread with frosting! Everyone needs a little change in their life every once in a while. So give this one a try and you will not be disappointed. The addition of this cinnamon icing goodness really takes the cake...or bread...you decide.

1 stick unsalted butter (room temp)

1/2 cup packed brown sugar

1-1/2 cup sugar

3 eggs

3 mashed ripe bananas

1 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

1. Preheat oven to 350 degrees.

2. Beat butter and sugars until smooth and creamy.

3. Beat in eggs, banana and vanilla until combined.

4. Stir in the flour and baking soda with spatula or wooden spoon until combined.

5. Spread into a greased sheet pan (I used 10x15). You can use a cake pan if needed but they will be slightly thicker bars (more like cake slices).

6. Bake 18-20 minutes until center is done. A toothpick inserted in center of bars should come out clean.

7. Cool cake completely on counter for 30 minutes before frosting.

Cinnamon Frosting

2 sticks butter (room temp)

3 cups powdered sugar

2 TB honey

1/4 teaspoon cinnamon

1 teaspoon vanilla

1. In electric mixer, beat butter until smooth. Add remainder of ingredients and beat until combined and creamy.

2. Frost bars once they are cooled completely.
