Are you feeling spicy? I like to make these on Friday nights as they are a perfect weekend cheat meal and a quick and easy option to prepare after the work day. Just grab a rotisserie chicken and skip right over the cooking so you can get straight to relaxing. I know some of you are not a fan of blue cheese (Dad), but not to worry. Just replace it with a drizzle of ranch dressing and you will be good to go! I use the fresh pretzel rolls from the grocery store bakery but you can certainly use any roll (or bun) of your choice.
1 small onion (diced)
2 TB butter
1 teaspoon minced garlic
1 TB Hidden Valley ranch dressing powder (not whole packet)
dash of salt and pepper
1 cup Frank's Original sauce (can add more if you like it saucy)
1 rotisserie chicken (shredded, skin removed)
blue cheese crumbles (or drizzled with blue cheese or ranch dressing)
4 pretzel rolls
1. In a large skillet, melt butter. Add onions and garlic and saute for 5 minutes.
2. Stir in dressing powder, salt, pepper and hot sauce. Cook on low heat for 2-3 minutes.
3. Stir in chicken, toss until coated. Cook additional 5 minutes until hot.
4. Serve chicken on buns and top with blue cheese if desired. If you are not a fan of blue cheese you can drizzle with ranch dressing.
