Cider Glazed Apple Bars


Enjoy these melt in your mouth bars after a day of apple picking!



For dough -

2 sticks butter (room temp)

1/3 cup sugar

1/3 cup brown sugar

1 t vanilla

2 cups flour

1/4 cup oats


1. Preheat oven to 350 degrees. Grease a square 9x9 inch pan and set aside.

2. Cream the butter and sugars until light and fluffy. Beat in the vanilla. Gradually add the flour until evenly incorporated. Do not over mix, and do not add oats just yet.

3. Use 2/3 of the dough and press down in prepared pan, making sure it covers the entire surface evenly.

4. Now mix the oats into the remaining 1/3 of the dough. Set aside for the crumble topping.

5. Bake the crust for 10 minutes. Remove from the oven and begin preparing the filling.


For filling -

3 apples (peeled and cored)

1 TB fresh lemon juice

2 TB brown sugar

2 TB melted butter

1/2 teaspoon vanilla

1/2 teaspoon cinnamon


1. Dice apples and add to a medium bowl.

2. Whisk together the remaining ingredients until combined. Pour over apples and toss well until coated.

3. Top the crust with the apple filling and arrange evenly. Crumble the remaining dough over the top of the apples. Break apart into smaller crumbles as needed.

4. Bake for 40 minutes until the crust begins to brown. Let cool completely before glazing.


For glaze -

2 cups powdered sugar

2 TB melted butter

3 TB apple cider

1/4 teaspoon cinnamon

1/4 teaspoon vanilla


1. Whisk together all ingredients until smooth.

2. Drizzle over cooled bars. Pairs well with homemade cinnamon ice cream - just posted before this!
